URAD DAL JALEBI
A delicious and a different way of making the beloved jalebi. Easy to do and an amazing dessert to impress your guests.

Ingredients

1 cup Tata sampan urad dal
2 tbsps yogurt
Ghee for deep frying
2 cups sugar
A large pinch of saffron
½ tsp green cardamom powder
Juice of ½ lemon
½ tsp baking powder
10-12 pistachios, blanched, peeled and slivered for garnish
Crushed dried rose petals for garnish

Method

1. Soak Tata Sampann Urad Dal with plenty of water for 4-5 hours.
2. Put soaked gram into a mixer jar, add 2-3 tbsps water and grind well. Gradually add yogurt in two batches and grind till the batter is of smooth and pouring consistency.
3. Transfer this batter in a large bowl and whisk for 5-7 minutes.
4. Add sugar and 1½ cups water in a non-stick deep pan and bring it to a boil. Add saffron and mix well, cook on low heat for 3-4 minutes or till the syrup reaches one string consistency.
5. Add green cardamom powder and lemon juice in the sugar syrup and mix well. Switch the heat off and allow the sugar syrup to cool slightly.
6. Heat sufficient ghee in a wide non-stick pan.
7. Add baking powder in the batter and mix well. Pour this in a jalebi cloth and bring the sides of the cloth to form a bundle.
8. Squeeze the batter into the ghee to make spiral shapes. Deep fry on low heat, turning jalebis occasionally till they are crisp. Drain and soak them into the sugar syrup for 1 minute.
9. Drain jalebis and arrange on a serving plate, garnish with pistachios and crushed dried rose petals. Serve.
