I've always believed that Yunnan people are the best at turning vegetables into delicious dishes. When I was little, Grandma simmered potatoes with fennel, and later, Mom stir-fried beef with mint—just one dish could make me eat two bowls of rice. Spring brings wild greens, summer gives us pumpkins, autumn has peanuts, and winter is all about radishes—each season with its own flavours. We wrap wild greens in rice noodles, stir-fry potatoes with chilli, cook pea shoots into soup, and even the simplest pumpkin blossoms are deep-fried into golden, crispy treats. In Yunnan, vegetables aren’t just side dishes—they’re the true stars on the table.
