इडली, डोसा, आंबोळी, मेदूवडा, रसम वडा, उत्तप्पा असे पारंपारिक दक्षिणात्य पदार्थ आता सर्वत्र आवडीने खाल्ले जातात. बेंगळुरूला गेले असताना तिथे मी ओनियन उत्तप्पा खाल्ला. सोडा, इनो न वापरता अगदी पारंपारिक पद्धतीने तिथे उत्तप्पा तयार केला होता. तिथेच मला ओनियन उत्तप्पाचे साहित्य, प्रमाण आणि कृती मिळाली. घरी आल्यावर त्याच पद्धतीने ओनियन उत्तप्पा मी बनवला आणि तो सगळ्यांनाच आवडला. आज त्याच पारंपारिक पद्धतीने आपण ओनियन उत्तप्पा बनवणार आहोत.

ओनियन उत्तप्पा साहित्य आणि प्रमाण :
१ कप इडली तांदूळ
पाव कप उडीद डाळ
पाव कप जाड पोहे
अर्धा टीस्पून मेथी दाणे
३/४ कप + २ टेबल स्पून पाणी डाळ तांदूळ वाटायला
१ मध्यम आकाराचा कांदा पिठात घालण्यासाठी
बारीक चिरलेला कांदा आवडीनुसार
बारीक चिरलेली कोथिंबीर आवडीनुसार
बारीक चिरलेल्या हिरव्या मिरच्या आवडीनुसार
साजूक तूप आवश्यकतेनुसार
उत्तप्पा चटणी साहित्य आणि प्रमाण :
३/४ कप खवलेला ओला नारळ
१ टेबलस्पून भाजलेले शेंगदाणे
१ टेबलस्पून पंढरपुरी डाळ
१/२ टीस्पून जिरं
१ टीस्पून साखर
मीठ चवीनुसार
२ मूठ ताजी कोथिंबीर
७ ताजी पुदिना पाने
५ कढीपत्ता पाने
४ हिरव्या मिरच्या
२ लसूण पाकळ्या
२ टेबलस्पून शेव
अर्ध्या लिंबाचा रस
३/४ कप पाणी
Onion Uttappa Ingredients and Quantity:
1 cup Idli rice
1/4 cup Urad dal
1/4 cup thick poha
1/2 tsp fenugreek seeds
3/4 cup + 2 tbsp water for dal rice
1 medium onion for adding to batter
Finely chopped onion as per taste
Finely chopped coriander as per taste
Finely chopped green chillies as per taste
Sugar as per requirement
Uttappa chutney Ingredients and Quantity:
3/4 cup grated coconut
1 tbsp roasted peanuts
1 tbsp Pandharpuri dal
1/2 tsp cumin seeds
1 tsp sugar
Salt as per taste
2 handful fresh coriander
7 fresh mint leaves
5 curry leaves
4 green chillies
2 garlic cloves
2 tbsp ginger
Juice of half a lemon
3/4 cup water
