veg kadai sabji is delicious and vibrant and is filled with rich flavors, aromatic spices and vegetables. Made in a kadai (Indian wok) this dish has a medley of onions, tomatoes, bell peppers and various assorted veggies together with spices and cream for a finger-licking restaurant style gravy! Kadai Sabz Ingredients quantity Whole coriander 1tbsp+1tsp Cumin seeds 1tsp+1tsp Saunf 1tsp Whole black pepper 1tsp Whole dry red chilies 1-2no. +2-3no. Oil 4-5tbsp Onion chopped 3no. Ginger garlic paste 1tbsp Tomatoes chopped 3no. Salt to taste Coriander 2tbsp Red chili powder 2tsp Turmeric powder ½ tsp Garam masala 1tsp Green chilies chopped 1-2no. Ginger juliennes ½ inches+ for garnish Water as required+ as required Curd 3tbsp Onion cubes ¼ cup Capsicum cubes ¼ cup Carrot boiled 1small French beans boiled 5-8no. Cauliflower boiled ½ no. Boiled potatoes ½ cup Green peas ¼ cup Kasuri methi 1tsp Special kadai masala 3tsp+ for sprinkle Fresh cream 3tbsp Coriander chopped 1tbsp+ for garnish Paneer cubes ¼ cup Method 1. In pan add whole coriander seeds, cumin seeds, saunf, black pepper, and whole dry red chili and dry roast all together properly. 2. Now take blender and blend the spices coarsely. 3. Now in pan add oil, whole coriander seeds, whole dry red chili, cumin seeds, onion chopped and sauté till they are brown in color. 4. Now add ginger garlic paste and sauté again for 2 mins. 5. Now add tomatoes and salt, cook till tomatoes are meshy. 6. Now add coriander powder, red chili powder, turmeric powder, garam masala, green chilies chopped, ginger juliennes and sauté it again properly. 7. Now add little water so the masala does not stick on pan. 8. Now add curd and sauté again. 9. Now add onion cubes, capsicum cubes and let them cook for some time. 10. Now add water to balance the consistency of the gravy. 11. Now add carrot cubes, French beans, cauliflower, potatoes and green peas and mix it with gravy properly. 12. Now add kasuri methi and special kadai masala and mix it properly. 13. Now add fresh cream and mix it again. 14. Now add chopped coriander and mix it. 15. Now add paneer cubes and mix it properly. 16. Our kadai sabz is ready. 17. Serve in bowl and garnish it with ginger juliennes, chopped coriander and special kadai masala.
