simple recipe for vegetable pakoras, also known as veg pakodas:

Ingredients:

1 cup chickpea flour (besan)
2 medium-sized potatoes, thinly sliced
1 onion, thinly sliced
1 cup mixed vegetables (such as cauliflower florets, spinach leaves, or bell pepper strips)
2-3 green chilies, finely chopped (optional)
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Water, as needed
Oil for deep frying
Instructions:

In a large mixing bowl, combine the chickpea flour, cumin seeds, turmeric powder, garam masala, and salt.
Gradually add water to the flour mixture to form a thick batter. The consistency should be similar to pancake batter.
Heat oil in a deep frying pan or kadhai over medium heat.
Dip the sliced potatoes, onions, mixed vegetables, and green chilies (if using) into the batter, ensuring they are evenly coated.
Carefully drop the coated vegetables into the hot oil, a few at a time, and fry until golden brown and crispy. Make sure not to overcrowd the pan.
Once fried, remove the pakoras from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
Repeat the process with the remaining batter and vegetables.
Serve the vegetable pakoras hot with mint chutney, tamarind chutney, or ketchup.
