【グルテンフリーVEGANキャロットケーキ】
〈材料〉
・米粉 200g
・てんさいとう 100g
・アーモンドミルク 120g
・ココナッツオイル 120g
・ベーキングパウダー小さじ2
・重曹 小さじ½
・りんご酢 小さじ2
・塩 ひとつまみ
・すりおろした人参 100g
・シナモンパウダー 小さじ1
・ナツメグパウダー ひとつまみ
・バニラオイル 小さじ2
・くるみ 40g
・レーズン50g
・アーモンドスライス 30g
【VEGANチーズフロスティング】
〈材料〉
・水切りした豆乳ヨーグルト 150g
・ココナッツクリーム 100g
・レモン汁 大さじ1
・てんさいとう 大さじ2
【GF Vegan Carrot Cakes】
〈Ingredients〉
・200g rice flour
・100g sugar beet
・120g almond milk
・120g coconut oil
・2 tsp baking powder
・½ tsp baking soda
・2 tsp apple vinegar
・a pinch of salt
・grated carrot( 1 carrot)
・1 tsp cinnamon powder
・a pinch of nutmeg powder
・2 tsp vanilla extract
・40g walnuts
・50g raisins
・30g almond slices
【Vegan Cheese Frosting】
〈Ingredients〉
・150g drained soy yogurt
・100g coconut cream
・1 tbsp lemon juice
・2 tbsp sugar beet
〈Instructions〉
①Preheat the oven at 170℃.
Drain soy yogurt over night.
②Sift rice flour, sugar beet, baking powder, baking soda, cinnamon powder, nutmeg powder and salt.
③Pour apple vinegar, almond milk, vanilla extract in another bowl and mix.
④Mix ② and ③ together first, and then add grated carrot, almond slices and raisins and mix all together.
⑤Oil the mold and pour the dough.
Decorate walnuts on top.
⑥Bake 25-30 minutes in the oven.
⑦Make the frosting.
Mix the ingredients and refrigerate.
⑧Once the dough is cooled off, decorate with the frosting sauce.
