Vegetable burgers

Among the summer recipes, one of our favorite appetizers with vegetable burgers could not be missing. Cooked without unnecessary fat ingredients, this recipe is a very good idea for your next lunch!

RECIPES:
Ingredients
1 onion
1 tomato without skin and seeds
1/2 bunch of parsley
2 pumpkins
1 eggplant
1 carrot
Mint

Oregano
Basil
200 g of feta cheese
2 eggs
3 tablespoons of fine semolina
4 tablespoons of breadcrumbs
4 tablespoons of flour
50 ml olive oil
100 g grated kefalotiri cheese

Method
First, puree the onion, tomato and parsley in the food processor.

Next, clean and grate the pumpkins, eggplant and carrot on a coarse grater.
Make sure to drain their liquids well and add the onion.

In addition, flavor with mint, oregano and basil.

Then, break the feta and incorporate all the other ingredients (adjust the salt and pepper if necessary).

Put in the fridge for 1 hour.

TIP: If our mixture is wet, add fine semolina until it thickens.

Then, take the mixture out of the fridge and shape into patties. We place them on a tray with non-stick paper.

Finally, we bake them at 200 degrees Celsius, on the resistances and when they get colored on one side (usually the bottom turns brown first) we turn them on the other side.
