Water Bath Canning Pineapple

Canning Pineapple Clean your pineapples by cutting off the top and peel away the prickly sides. You can use a small melon baller to remove the little bits that stay. If you are using a whole pineapple at this stage you want to cut it in half to remove the core. Cut the pineapple into chunks if that is what you want or you can cut it finer to make crushed pineapple. It really depends on what you plan on using it for in the end. Pack the pineapple into jars, I use half pint jars in this video but if you have a bigger family you may want to go pint or quart. Do whatever suits your family. Cover your pineapple with a simple syrup which can be made using water and sugar or just use water, whichever method is best for you. We use ours on desserts so we like it a little sweeter but it is just fine with no added sugar. Use a skewer to de-bubble the jars and then wipe the rims with a clean cloth. Put the seals into place and screw on the bands to fingertip tight. The jars go into the water bath canner. Make sure the water is at least an inch over the top of the lids of the jars and bring the canner to a boil. Once the water starts to boil time 20 minutes for half pints and pints or 25 minutes for quarts. When the time is up shut the stove off and remove the lid, allowing the canner to cool about 5 minutes before you remove the jars from the canner.
