Savoury Oat Waffles
---
Ingredients:
- 128 grams oat flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 180 ml milk of choice (room temperature; light coconut milk, nut milk, or cow's milk)
- 35 grams melted coconut oil or 70 grams unsalted butter, melted
- 2 large eggs

Instructions:
1. Mix Dry Ingredients: In a mixing bowl, whisk together the oat flour, baking powder, and salt.
2. Mix Wet Ingredients: In another bowl, whisk together the milk, melted coconut oil or butter, eggs. Tip: If the coconut oil solidifies when it contacts cold ingredients, gently heat the wet mixture in the microwave in 10-second intervals until it melts again.
3. Combine Wet & Dry: Pour the wet ingredients into the dry ingredients. Stir with a spoon until just combined (the batter will still be a little lumpy). Let the batter rest for 10 minutes to allow the oat flour to absorb some of the moisture.
4. Preheat Waffle Iron: While the batter rests, preheat your waffle iron to medium-high heat.
5. Cook the Waffles: After 10 minutes, give the batter a final stir. Pour enough batter onto the preheated waffle iron to cover the center and most of the surface area. Close the lid and cook until the waffles are golden brown and crisp.
6. Cool & Serve: Transfer the cooked waffles to a cooling rack or baking sheet. Avoid stacking the waffles on top of each other to maintain their crispiness. If needed, keep them warm in a 90°C (200°F) oven until you’re ready to serve.
