Apple-Lemon Meringue Cake🍰
Ingredients
For the cake:
• 250 g cored and sliced apples
• 100 g butter (room temperature)
• 100 g sugar (can be reduced I think)
• 1 tsp vanilla sugar (or 1 tsp vanilla extract)
• 4 egg yolks
• Grated peel of 1 lemon
• 2 dl (120 g) all-purpose flour
• 1 dl (40 g) almond flour
• 2 tsp baking powder
• 4 tbsp milk
• 2 tbsp lemon juice
• 2-3 tbsp lemon curd

For the meringue:
• 4 egg whites
• 180 g sugar
• 1 tsp lemon juice
• 30-50 g almond flakes
• 1-2 tsp powdered sugar (for dusting)

1. Prepare the apples:
• Mix the sliced apples with 2 tablespoons of lemon juice and set aside.

2. Make the cake batter:
• Beat the butter and sugar until light and fluffy.
• Add the egg yolks one by one, mixing well after each addition.
• In a separate bowl, combine the flour, almond flour, vanilla sugar and baking powder. Gradually add this dry mixture to the butter-sugar mixture while stirring.
• Add the milk, lemon zest, and lemon juice, mixing until smooth.

3. Prepare the cake tin:
• Line a 20x30 cm baking pan with parchment paper.
• Pour the batter into the pan and spread it evenly.
• Press the apple slices into the batter to form an even layer.
• Dot the cake with small spoonfuls of lemon curd evenly across the surface.

4. Make the meringue:
• Beat the egg whites with lemon juice until soft peaks form.
• Gradually add the sugar while continuing to beat. Once all the sugar is added, increase the speed and beat for about 5 minutes until the meringue is stiff and glossy.

5. Assemble and bake:
• Spread the meringue over the cake, covering it evenly.
• Sprinkle the almond flakes on top, mixing a few into the meringue if desired.
• Dust lightly with powdered sugar.

6. Bake the cake:
• Preheat your oven to 170°C (340°F) and bake the cake on the lowest rack using the bottom-up heating mode for 40-45 minutes, or until the meringue is golden and firm.

7. Cool and serve:
• Allow the cake to cool completely before slicing and serving. Enjoy with a cup of tea or coffee!
