Tofu scramble (serves 2-3)
- 1 heaped tbsp vegan butter
- 1 brown onion, diced
- 2 cloves garlic, crushed
- small handful fresh parsley, roughly chopped
- 200g firm tofu, crumbled
- 2 cups soy milk
- 1 tsp veggie stock powder
- 1 tbsp nutritional yeast
- 1 tsp dijon mustard
- 1/4 tsp turmeric powder

Crumbled tempeh & leek (serves 1-2):
- 1 leek, sliced and washed thoroughly
- 150g soy tempeh, crumbled
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 3 tbsp teriyaki sauce

Creamy oats (serves 1):
- 2/3 cup quick oats
- 1 + 1/2 cups soy milk
- 1/8 cup plant cream (optional)
- 2 tbsp vanilla protein powder
- 1 tbsp rice malt syrup
To serve:
- frozen blueberries, melted
- almond butter
- hemp seeds

Peanut tofu (for sandwich):
- 100g firm tofu, cut into rectangles
- 1 tbsp corn flour
- 1 tsp vegan chicken stock powder
- 1 tbsp olive oil
- 1/3 cup smooth peanut butter
- 1/8 cup soy sauce
- 1 tbsp rice wine vinegar
- 2 tbsp water

Sesame cucumbers (for sandwich):
- 1/2 large cucumber, sliced
- 1/2 cup rice wine vinegar
- 1 tsp salt
- 1 tsp raw sugar
- 2 tbsp sesame seeds

Choc tofu mousse (serves 4):
- 300g silken tofu
- 1/2 cup soy vanilla yoghurt
- 200g dark chocolate, melted
- 1 tbsp rice malt syrup or maple syrup
- 1 tsp vanilla extract
