Turkey kofte with rice and salad - 320cals, 2 syns
For the koftas
- 1 courgette, grated
- 500g lean minced turkey
- 2 tablespoons each of chopped mint and parsley
- 4 tablespoons fresh wholemeal breadcrumbs
- 1 medium free-range egg
- Zest of 1 unwaxed lemon
- heaped tablespoon zaatar spice mix
- 1 teaspoon garlic granules
For the mint yogurt
- 200g thick natural yogurt (0% fat).
- 1 tablespoon chopped mint
- Juice of 1 lemon
- 1 teaspoon garlic granules
For the tabbouleh
- 260g coooked quinoa
- 1/2 cucumber, deseeded and diced
- 2 large tomatoes, deseeded and diced
- 1/2 red onion, finely diced
- 80g pomegranate seeds
- 2 large handfuls of parsley, roughly chopped
- Juice of 1 lemon

dissolved in 150ml boiling water)
