Dr Mindy Pelz, a fasting expert, is in the kitchen with us today to share her go-to recipe for breaking a fast – a simple, protein-packed kimchi edamame bowl. It’s perfect for women’s health, with ingredients to support hormones, gut health and energy.
Here’s what you’ll need:
• Quinoa – a high-protein base for better blood sugar levels.
• Tofu and edamame – great sources of plant protein and phytoestrogens.
• Kimchi – adds probiotics for gut health and a spicy kick.
• Seaweed – for iodine, which supports thyroid health.
• Red cabbage – high in fibre and polyphenols with antioxidant effects.
• Avocado – healthy fats to keep you full and energised.
• Dressing – a mix of coconut aminos, olive oil, lime juice and ginger for flavour and extra nutrients.
To make the bowl:
1. Layer your cooked quinoa at the base.
2. Add tofu, tempeh and edamame.
3. Top with kimchi, seaweed, red cabbage, and sliced avocado.
4. Drizzle with the dressing and enjoy!
