White Beehoon Noodles, Indian Style

This Beehoon noodle is a Vegan dish and cooked Indian Style.
Filled with spices, it's slightly spicy, fragrant with aromatics. It makes
a good party potluck too.

Ingredients
about 1 kg vermicilli rice noodles, soaked 10 mins in plain water
1 1/4 cup cooking oil
1/2 cabbage, julienne
1/2 carrots, julienne
1 1/2 bombay onions, sliced thinly
6-7 pips garlics, rough chopped
2" ginger, preferably old. julienne
8 sprigs of curry leaves, wash & dry
20 dry chilies, wash & cut
spices
3 tsp mustard seeds or biji sawi
1 tsp fenugreek or halba
1/2 tsp fennel seeds or jintan manis
1/2 tsp cumin or jintan putih
seasoning
2 tbsp mushroom powder dissolved in 1/2 bowl hot water
2 1/2 tsp coarse salt
2 tsp coarse sugar
600 ml water, add extra is noodles is too dry
garnishing
coriander leaves (optional)
method
soak noodles in room temp water for 10 mins
chopped the vegetables
heat wok with 1 1/4 cup cooking oil
when oil is hot, add in the spices
when spices smell fragrant, add in gingers, fry awhile
add in onions, fry awhile
add in garlic , fry awile
when garlic is slightly brown, add chilies
add curry leaves
fry awhile until onions is slightly brown and soft
Add in carrots and cabbages, stir & mix well
add in noodles
add in mushroom seasoning, salt
stir well until vegetables and seasoning is well mixed
add in 600 ml water, mix well
cover and simmer for about 2 to 3 mins
taste and adjust.
