Here is the recipe we used, adapted from "Incredible Wild Edibles" by Samuel Thayer:
Dry Ingredients:
3 1/4 cups of all-purpose flour
1 1/2 cups of chopped pecans
1 1/2 teaspoons of baking soda
1 1/2 teaspoons of baking powder
3/4 tsp salt
1/2 tablespoon cinnamon
1/2 tablespoon powdered ginger
Wet Ingredients:
1 3/4 cups persimmon pulp
1 1/2 cups maple syrup
1/2 Tbsp. vanilla extract
3/4 cups or 1 1/2 sticks of browned butter
3 eggs
