Why Our Sourdough Bakery Makes Cookies

Today brought an unexpected twist: a neighboring business requested cookies for a good cause, but due to a mix-up, we had to give away all the cookies we had prepared for sale. Luckily, cookies are one of the most versatile items on our menu—practical to make in batches and ready to bake as needed.

Why cookies at a sourdough bakery? Beyond their deliciousness, they play a strategic role. When pastries run out (which we aim for daily to minimize waste), cookies help restock the case quickly, offering something sweet to pair with bread. We’ve learned that bread sells better when there’s a small treat available alongside it.

This practical insight has sparked a dream: integrating custom orders into our system. Currently, we can’t accommodate pre-orders due to the complexities of syncing them with our production workflows. However, we’re working on a custom-order platform that will seamlessly manage supply, ingredients, and schedules. It’s a big challenge, but we’re excited to make it happen in 2025.

As for cookies, they’re a crowd-pleaser and a perfect canvas for experimenting with heritage grains like Rouge de Bordeaux, White Sonora, or Khorasan. These flours add unique flavors and aromas, making each batch of cookies something special. Want to try a twist on the classic chocolate chip? Substitute a portion of the flour with one of these grains for nuanced, one-of-a-kind cookies.

Everything we bake is long-fermented with our sourdough starter ‘Harriet’. Each product is artisan, crafted by hand, from the best local ingredients, with no shortcuts.

We bake in line with 13,000 years of human history, avoiding artificial processes and unnecessary ingredients. Honoring tradition and serving better bread for our community.
