Janusz and Danuta Leśniak are owners of a 14-hectare organic farm located 20 kilometers outside the city of Wisconsin Dells in the USA. Originally from Podhale, they both immigrated to the United States in their youth (Janusz in 1989 at age sixteen and Danuta in 1979 at age nine). But they have never forgotten their Polish heritage. Janusz is a lifelong Góral musician, playing events all over Polonia and recording several popular albums. He met Danuta at a Chicago restaurant where Janusz played on the weekends. They married and raised three sons in the Góral traditions. They speak the Góral language on a daily basis and actively participate in the Polish communities in Wisconsin and Chicago. Janusz and Danuta originally purchased their Wisconsin property in 2012 with the intention of making it a place for weekend getaways. It required years of renovation to restore the disused farm and make it suitable for living. Some of the fields had been sprayed with chemicals for many decades of growing corn using conventional methods. Then, as their sons became adults and Janusz and Danuta fell more in love with life in Wisconsin, they decided to leave Chicago in 2017 and live on their farm permanently. Through the practice of rotational animal grazing, they are bringing life back to this local ecosystem. The farm has many animals - they specialize in breeding St. Croix Hair Sheep, but they also raise grass-fed cows, Nigerian Dwarf Goats, pasture-raised chickens, turkeys, ducks, geese and hens that lay eggs. They also have experience raising pheasants and rabbits. They are also growing their own orchard with various fruit tree varieties, as well as a sizeable vegetable garden. Janusz also participates in the annual deer hunting season. Their goal is to be as self-sufficient and healthy as possible, while also inspiring and encouraging others to take an interest in organic farming. They want to leave the land in much better condition than when they bought it. All animals are fed only organic feed, and Janusz and Danuta have never used any artificial fertilizers or chemical sprays. Aside from the daily operations of the farm, Janusz hauls heavy equipment for a rental company and Danuta cares for her 90-year-old mother Rozalia who lives with them.
