"Rachel, where do I find your video on how to make Zucchini Relish?" After getting that question about 200 times, it's finally here! Our favorite way to use up all that zucchini ♥ We use this on burgers, hot dogs, to make up tartar sauce, etc. It's really amazing stuff! You can follow along in the video, or here is what Rachel has written down in her book. I think in the video she made a 2x or 1.5x batch.
12 C shredded zucchini
4 C chopped onion
5 Tbsp canning salt
2 sweet bell peppers chopped
4 C white vinegar
3/4 tsp nutmeg
1/2 tsp mustard powder
3/4 tsp tumeric
1 1/2 tsp celery seed
1/2 tsp pepper
3 C sugar
1 Tbsp cornstarch
1/2 inch headspace, 15 minute water bath ♥
