Here’s a detailed recipe: Ingredients: 12 eggs \ 1 dozen 5 onion, finely chopped 2 medium tomato, finely chopped 1 green chili, finely chopped (optional, adjust to taste ) 4 teaspoon oil or ghee Ginger - Garlic paste - 1 teaspoon 1/2 teaspoon cumin seeds 1/2 teaspoon turmeric powder 1 teaspoon Dhaniya Powder 1 teaspoon Kashmiri lal mirch ( Optional ) 1 teaspoon red chili powder (Optional ) Salt as per taste *Pav Bhaji Masala - 1(1/2) teaspoon* Fine freshly chopped coriander Instructions: Heat oil or ghee in a pan over medium heat. Add cumin seeds, green chili, and let them splutter. Add the finely chopped onions and sauté until they turn golden brown. Add the ginger garlic paste , chopped tomatoes and all masalas . Cook until they soften and the oil starts to separate. Lower the heat and pour the whisked eggs into the pan. Stir continuously to scramble the eggs and mix them with the vegetables and spices. Cook until the eggs are fully set and have a scrambled consistency. Finishing Touch: Garnish with fresh coriander leaves. Serving: Serve hot with roti, paratha, bread, or as a side dish with rice.
