Fafda - Gathiya - Pata Gathiya are the most popular farsan item for snacks in Gujarat, particularly in Saurashtra region. Fafda ganthia made in Saurashtra region is considered to be the best in taste and texture.
It is considered to be toughest thing to make at home with same taste and texture. So, we visited Rajubhai, Royal Food at Sama-Savli Area, Vadodara to learn from him the correct method of making perfect fafda gathiya. He taught the exact method with measurement of each ingredients.

Please watch the live ganthiya making by Rajubhai at his shop and then I tried making fafda and jalebi at my home with same method and measurement, and yes I made it perfect just similar to fafda what we eat readymade. I recommend this recipe for trying during this Dussehra festival.

INGREDIENTS
FOR KADHI (CURRY)
A glass of buttermilk
1 tbsp besan
Half glass water
2 tbsp oil
Half tsp mustard & cumin seeds
Half tsp dry coriander seeds
1/4 tsp hing
Curry leaves
Chopped green chili
1/4 tsp turmeric powder
Half tsp salt
1 tsp sugar

FOR JALEBI
1 cup all-purpose flour
1 tbsp curd
Water as required

FOR JALEBI CHASNI
1 cup sugar
A cup of water
8-10 threads of kesar
1/4 lemon
1 tbsp besan
1/8 tsp baking soda
Yellow/Orange food colour

FOR FAFDA (PATA) GATHIYA
250 grams besan
2 grams Papad Kharo Powder (Alkaline Salt)
6 grams salt
25 grams oil
5 grams ajwain seeds
Half cup water (125 ml)
Hing & black pepper powder
