▷Ingredients(6 puffs):
■Puff pastry
40g unsalted butter
30g sugar
35g cake flour
10g ground almonds
85g water
1g salt
50g unsalted butter
55g cake flour
2 eggs
■Custard cream
170g milk
1/2 vanilla beans
35g sugar
12g cake flour
200ml heavy cream
15g sugar
▷Preparation:
Bring butter and eggs to room temperature.
▷How to make:
1. make the puff pastry dough. Mix the unsalted butter with the sugar.
2. Add flour and ground almonds, mix, wrap in plastic wrap and refrigerate for 1 hour.
3. Put water, salt, and unsalted butter in a saucepan over medium heat.
4. Bring to a boil, then turn off the heat and stir in the sifted flour. When the flour mixture is no longer powdery, heat over medium heat, stirring constantly, until the mixture comes together.
5. Transfer the dough to a bowl, add the beaten egg in 3 parts and mix until smooth. Squeeze out the dough into 6 pieces.Cut the refrigerated cookies into 6 equal pieces and place on top of the puff pastry.
Bake in a preheated oven at 180℃ for 40-45 minutes.
7. Make the custard cream. Combine milk and vanilla bean and warm to 60°C.
8. Add the sugar to the egg yolks and mix until the mixture turns white. Add flour and mix.
Transfer the mixture to a saucepan over medium heat. Cook the custard, stirring constantly.
10. Strain the custard mixture and transfer to a baking pan, cover tightly with plastic wrap and place in ice water to cool.
11. Beat the cream with the sugar.
12. Break the custard cream into pieces, combine with the whipped cream, and squeeze the mixture into the puff pastry.
