सांडगी मिरची हा पारंपरिक कोकणातील वाळवणाचा प्रकार आहे सांडगी मिरची करत असताना कुठली मिरची घ्यावी? सांडगी मिरचीचा मसाला सुटू नये म्हणून काय करावे? सांडगी मिरचीला बुरशी न लागता वर्षभर टिकावी म्हणून काय करावे या सर्व टिप्स सहित संपूर्ण सांडगी मिरचीची रेसिपि. आजवर कोणीही न सांगितलेल्या टिप्स सहीत सांडगी मिरची कशी करायची याची सविस्तर कृती.
Let’s see how to make sandgi mirchi today. This is a summer special recipe as it is the best season to make it. It is one of the “Valvan” recipe. In Maharashtra, many recipes like papad, papdya, kurdai, sandge etc are made in summer and stored for later use throughout the year. Sandgi mirchi is a Konkan special recipe. Green chillies are stuffed with spices and dried under hot sun. These taste just awesome. This is an age-old traditional recipe. This is a perfect side dish and once prepared can be used throughout the year. I will share lot many tips during the video. So don’t miss anything. Try this recipe at home and drop a comment for me. Ingredients:
• 1 kg Green chilies
• 100 gm Mustard seeds
• 100 gm Coriander seeds
• 50 gm Cumin seeds
• 30 gm Fenugreek seeds
• 10 gm Hing
• 10 gm Turmeric powder
• 40 gm Salt
• 1/2 cup Buttermilk
• Salt as needed
Method:
• Wash chilies under running water quickly and spread them on a clean cotton cloth to dry.
• Dry the chilies really good.
• Cut off the stem and make a vertical slit to each chili.
• You can remove the seeds if you want. dry roast mustard seeds until they begin to pop up and
take it out into a dish.
• Dry roast coriander seeds until they change the color a little and nice aroma is released, and
transfer them another dish.
• Dry roast cumin seeds until nice aroma is released from it and transfer it into the coriander seeds.
• Turn the gas off and add fenugreek seeds into the pan. Roast them well.
• Transfer the mustard seeds into a blender jar and pulse it 7-8 times to make mohrichi dal.
• Transfer it into a dish. blend fenugreek seeds into coarse powder and transfer it into mustard
seeds.
• Blend roasted coriander seeds and cumin seeds well together into coarse powder and transfer it
into the mustard powder mixture.
• Add hing, turmeric powder and salt and mix everything well together. Masala for sandgi mirchi is
ready.
• Take half of the masala out into a bowl.
• Add buttermilk in half of the masala and mix well.
• Open a chili and fill in the masala.
• Fill in as much masala as you can into each chili and press it well.
• Dry it under hot sun immediately until it is completely dry.
• In second method, rub salt inside each chili well and fill in the masala in each chili.
• Fill in as much masala as you can and press it well.
• Cover and rest the chilies overnight or for at least 10-12 hours before drying them under hot sun.
• Dry these chilies also under hot sun until they are completely dry.
• Flip each side each day do that the chili will dry well from all sides. Sandgi mirchi is ready.
• Store it in an airtight container. It has shelf life over a year.
• You can spread a little oil on the masala and microwave the sandgi mirchi for 1 minute or deep fry
it.
