Today I made a super low-fat sticky and chewy sweet potato cheesecake without cheese.🍠🧀
Instead of cheese, I used Greek yogurt + salt to give it a cheesiness, and oatmeal flour adds to the stickiness and mochiiness of the sweet potatoes.

150g sweet potato
110g Greek yogurt
2 tbsp oat flour (about 20g)
1 egg
1.5 tbsp honey
Pinch of salt

1, Peel and cut 150 g of sweet potatoes, add enough water to cover the sweet potatoes and microwave them in a 600 W microwave oven for 6 minutes to soften them.
2, Mash the sweet potatoes with a fork, add 110 g Greek yogurt and mix well.
Add an egg, a tablespoon of honey and a pinch of salt.
4, Finally, add 2 tablespoons of oat flour and mix until a smooth dough forms.
5, Pour the batter into a container lined with a cookie sheet and microwave at 600W for 3 minutes.
6, After removing, cover with a lid or plastic wrap and allow to heat through in the residual heat.
7, Wipe off any steam from the lid or plastic wrap before placing in the refrigerator.
