Recipe for Basil Sauce* - Makes about 300cc
(Ingredients)
30 basil leaves
1.5 teaspoons chicken broth
70g cheese powder
30g almond powder
A very small amount of garlic tube
200cc extra virgin olive oil
A pinch of salt
W pepper to taste

(Directions)
Tear the basil leaves.

In a pot, bring 1% salt water to a boil.
1/2 tablespoon salt to 1 liter.

Soak the basil in the water.

Soak the basil in cold water and wipe dry with kitchen paper.

Chop with a knife (if using a blender, this step is not necessary).

Put the chopped basil in a bowl and mix all the ingredients together.

Process in a blender, hand mixer or food processor.

Finished product


Storage
Refrigerate for up to one week. However, if refrigerated, the flavor will fade in a few days.
Freeze for several months. Be sure to keep the air tight.

Examples of dishes using this sauce
Serve with seafood sashimi, or pour over the top for carpaccio.
Genovese sauce for pasta (can be served hot or cold).
As a sauce for grilled fish (serve as is).
Serve with grilled meat and tomato sauce.
Serve with Somen noodles.
