Let’s see how to make instant and delicious basundi today. Though this is an instant basundi, it gets that perfect creamy and granular texture. This is a popular Indian dessert. It is a sweet dish made by thickening the milk and flavoring it with cardamom and saffron. Traditional recipe takes a lot of time to reduce the milk. Today I will share how to make basundi withing 10 minutes. Still it will get that perfect color and texture. Basundi is Manthan’s favorite dish. Today, being his birthday, I am making it for him. We already have seen 1-2 basundi recipes. This is yet another quick addition to the list. This dessert not only looks tempting but also tastes super delicious. Ingredients:
• 500 gm full cream Milk
• 50 gm Khava / Khoya
• Dry nuts (Optional)
• 1/2 cup Sugar
• 1 tbsp Corn flour (Optional)
• Milk as needed
• Cardamom powder
Method:
• Heat up milk in a pan and bring it to boil. Heat up a pan on medium heat and add khava.
• Roast the khava really good.
• When the khava is almost roasted, add dry nuts and fry it well together.
• Adding dry nuts in optional. You can skip it if you don’t want.
• When khava is roasted well and milk begins to boil, transfer the roasted khava into the boiling milk
and mix well.
• Add milk in the corn flour and mix it well to make slurry.
• Add this slurry into the boiling milk and mix well.
• Boil the milk for few more minutes. Adding corn flour is optional.
• You can skip it if you don’t want.
• Heat up a pan on medium heat and spread sugar in it.
• Let it melt until it turns into caramel. Do not disturb the sugar at all.
• Sugar melts and gets color like honey or golden color to turn into caramel.
• When the caramel is ready, transfer it into the boiling basundi. Make sure add hot caramel into hot
milk.
• Mix well and turn off the gas.
• Add cardamom powder and mix well. Basundi is ready.
• You can serve it as it is or chilled.
