GUAVA/AMRUD KI CHUTNEY
Preparation time 15 minutes
Cooking time 25-30 minutes
Serving 2
Ingredients
½ kg Guava (अमरूद)
Salt to taste (नमक स्वादानुसार)
50 gm Sugar (चीनी)
25 ml Vinegar (सिरका)
1 heaped tbsp Red chilli powder (लाल मिर्च पाउडर)
2 tbsp Oil (तेल)
1 inch Ginger - chopped (अदरक)
10-15 Black pepper cons (काली मिर्च के दाने)
5 Cloves (लॉन्ग)
Water (पानी)
200 ml Guava juice (अमरूद का रस)
1 tbsp Tender Coriander stems (धनिए के डंठल)
Process
In a bowl add guava, salt, sugar, vinegar, red chilli powder and mix everything properly and keep aside for further use.
In a kadai heat oil and add ginger, black pepper cons, cloves saute for a minute.
Then add the guava mixture, water, cover and cook on low flame for 15-20 minutes.
Remove the lid and add guava juice and continue cooking for 5-10 or until soft and thick.
Now add the coriander stems and cook for 2 minutes, switch off the flames and let it cool down.
Store in the fridge in a airtight container.
PINEAPPLE CHUTNEY
Preparation time : 10 minutes
Cooking time : 25-30 minutes
Servings : 4-6
Ingredients
2 tbsp Oil (तेल)
1 inch Ginger - chopped (अदरक)
½ tsp Onion Seeds (कलौंजी)
1-2 fresh Green Chillies - chopped (हरी मिर्च)
Salt to taste (नमक स्वादानुसार)
1 big whole Pineapple (overripe) - chopped (अनानास)
2 tbsp tender Coriander Stems - chopped (धनिए की डंठल)
1 tbsp Vinegar (सिरका)
2 tbsp Sugar (चीनी)
a few Saffron Strands - soaked in water (केसर)
1 tbsp Honey (शहद)
a pinch Black Pepper Powder (काली मिर्च का पाउडर)
Process
In a pan heat oil and add ginger, onion seeds, green chillies, salt and saute for a few seconds.
Now add the chopped pineapple saute for a minute then cover and cook for 10 minutes.
Remove the lid and add tender coriander stems, vinegar then continue cooking for 5-6 minutes on medium heat.
Now add sugar, mix it properly and continue cooking for 5-6 minutes on medium heat.
Once it appears shiny add saffron soaked in water then cover and cook for 2-3 minutes.
Remove the lid and switch off the flames then add honey, black pepper powder and mix everything properly, now let it cool down properly and store it in an airtight container in the fridge.
