Today's recipe is for sweet potato yokan (sweet potato dumpling) with lots of sweet potatoes.
Sweet potatoes are sweeter when cooked slowly and deliberately, so I baked them in the oven for a long time to bring out their sweetness.
If you strain the sweet potato, you will get a smooth sweet potato yokan just like in the store☺. You can also use a food processor.
This recipe makes a sweet potato yokan that is not too sweet and has a natural sweetness. If you prefer a sweeter sweet potato yokan, try adding 80g of sugar to the agar water.
▷Ingredients:
500-600g sweet potato
150 g water
2 g agar agar powder
1g salt
▷How to make:
1. Wrap the washed sweet potato in wet kitchen paper and cover with aluminum foil.
2. Bake the baked sweet potato in an oven at 180℃ for 40 minutes to 1 hour without preheating.
3. When the sweet potato is soft enough to pass through a bamboo skewer without resistance, peel the sweet potato. When the skin is removed, mash the sweet potatoes one by one while they are still hot. If you want to make it smooth, mash the sweet potatoes further. Prepare 500g of mashed sweet potato.
4. Put water and agar in a pot and heat. When the agar water comes to a boil, continue heating for 2 minutes while stirring.
5. Add salt to the agar and dissolve, mix with the mashed sweet potatoes while still hot, and fill the molds without gaps. Refrigerate for 2 hours. Cut into desired size.
