For Varagu Arisi Biryani

Varagu Arisi (kodo Millet)- 1 Cup
Oil- 2 tbsp
Ghee- 1 tbsp
Bay Leaf- 1
Black Cardamom- 1
Star Anise- 1
Cloves- 2 to 3
Cashew nuts- 5 to 7
Onion- 2 (chopped)
Salt to Taste
Green Chilli- 2
Ginger Garlic Paste- 1 tsp
Tomato- 1 (chopped)
Mint Leaves- Few
Coriander Leaves- Few
Carrot- 1 (chopped)
Chilli Powder- 1 tsp
Coriander Powder- 1 tsp
Biryani Masala- 1/4 tsp
Water- 2 Cup



For Kudhira Vazhi Curd Rice (Barnyard Millet)

Kudhira Vazhi Arisi(Barnyard Millet)- 1 Cup
Water- 3 Cup
Salt to Taste
Oil- 1 tsp
Mustard Seeds- 1/2 tsp
Ginger- 1 tbsp (Chopped)
Green Chilli- 2
Red Chilli- 2
Curry Leaves- Few
Hing- a Pinch
Curd- as Required
Grated Carrot- 1

For Thinai Brinji Rice(Foxtail Millet):
Foxtail Millet- 1 cup
Ghee-2 tbsp
Oil- 1 tsp
Cinnamon -2
Star Anise-1
Black Cardamom-1
Bay leaf-1
Few cashew
Onion-1
Ginger Garlic Paste-1 tsp
Tomato-1
Few mint Leaves
Few coriander Leaves
Salt
Coconut milk-2 cup

Samai lemon rice(little millet):

Little Millet -1 cup
Salt -1 tsp
Oil- 1 tsp
Oil- 2 tsp
Mustard seeds-1 tsp
Hing - a pinch
Few curry Leaves
peanut -1/4 cup
channa Dal-1/2 tsp
Turmeric Powder-1/4 tsp
Lemon Juice-1 tbsp
Few coriander Leaves
