भातासाठी | For Making Rice 01:35
* तांदूळ १/२ किलो | Biryani Rice 1/2kg
* मीठ ४ चमचे | Salt 4 tbsp
* जिरे १/२ tsp | Cumin ½ tsp
* तमालपत्र २ | Bay Leaves 2
* पुदिना पाने १०-१२ | Mint Leaves 10-12
* कोथिंबीर चिरून २ tbsp | Chopped Coriander 2 tbsp
* लिंबाचा रस १ चमचा | Lemon Juice 1 tsp
पनीर मटार मसाल्यासाठी | For Making Paneer Gravy for Biryani 05:40
* पनीर ४०० ग्राम | Paneer 400gram
* मटार ४०० ग्राम | Green Peas 400gram
* शाही जिरे १/२ tsp | Shahi Jira ½ tsp
* हिरवी वेलची ५ -६ | Green Cardamom 5-6
* लवंग ५ - ७ | Cloves 5-7
* काळी मिरी ५ - ७ | Black pepper corns 4-5
* दालचिनी २ इंच | Cinnamon 2inch
* तमालपत्र २-३ | Bay Leaves 2-3
* चक्रफुल २ | Star Anise 2
* मसाला वेलची २ | Black Cardamom 2
* बारीक चिरलेला कांदा २ मोठे | Finely Chopped onion 2 large
* आलं लसूण पेस्ट २ tbsp | Ginger Garlic Paste 2 tbsp
* बारीक चिरलेला टोमॅटो २ मध्यम | Finely Chopped Tomatoes 2med
* बारीक चिरलेली कोथिंबीर १/२ वाटी | Chopped Fresh Coriander 1/2 cup
* पुदिना पाने १/२ वाटी | Mint Leaves 1/2 cup
* ताजे दही १/२ कप | Fresh Curd 1/2 cup
* हळद १/२ tsp | Turmeric 1/2 tsp
* मिरची पावडर १/२ tsp | Red Chilly pw 1/2 tsp
* बेडगी मिरची पावडर १-१.५ tsp | Bedegi Chilly pw 1-1.5 tsp
* गरम मसाला पाव १ - १.५ tsp I Garam Masala Pw 1-1.5 tsp
* मीठ चवीनुसार | Salt to taste
थर देण्यासाठी | For Biryani Layering 11:10
* तळलेला कांदा २ कांदे तळून | Birista of 2 onions
* तळलेले काजू पाकळ्या १५-२० | Fried Cashews 10-15
* बिर्याणी मसाला I Biryani Masala
* केशर १०-१२ काड्या | Saffron Sticks 10-12
* साजूक तूप | Ghee
* पुदिना | Mint Leaves
* कोथिंबीर | Fresh Coriander
How to Make Matar Paneer Biryani Recipe / How to Make Paneer Biryani
How to Make Biryani Rice - 02:05
* Wash & soak the rice for 30 mins & once soaked, drain the excess water.
* Into a large vessel boil ample amount water, once water starts boiling add salt, whole spices, mint leaves & fresh coriander & boil for a min
* the add lemon juice, keep the flame to high & add soaked rice & mix gently
* Bring the water to boil
* Once water starts boiling, boil the rice on high flame for 5-6 mins / until rice is cooked 80%
* then strain the rice using a strainer to remove water & keep it aside
Paneer Matar Biryani Masala Gravy - 06:30
* Cut Paneer into large cubes
* Heat up ghee or oil into a pan & shallow fry paneer cubes & take them out
* Add more oil / ghee to the pan once oil is hot add whole spices & finely chopped onions until they get golden brown color
* Add ginger garlic paste & saute for 2mins
* To this add tomatoes, some salt & saute until tomatoes get soften
* Then add powder spices, fresh curd, some water & mix well
* Later add fresh coriander, mint leaves & green peas & saute for 2 -3 mins
* then add paneer & salt to taste mix well, cover & cook for 1 min
* Turn off the flame
Biryani Layering - 11:40
* Into a heavy bottom biryani pot make layers as shown in the video
* Turn on the gas flame, keep the biryani pot onto the gas flame, for the first 2 mins keep the flame to high & then lower the flame OR you can put a flat dosa tawa on the gas & biryani pot onto the tawa
* Cover the pot with a tight lid / you can seal the edges using chapati dough
* And cook on very low flame for 15-20 mins
* After 15 mins, turn off the flame, keep it as it is for 30 mins & then serve the biryani
