I didn't end up using the corn. I suggest instead of getting the corn, buying about 3 more Roma tomatoes so that you have plenty of tomatoes for salads and the recipes.
⭐️ RECIPES
⭐️ WITH MUSHROOMS, SPINACH & TOMATOES
You have enough pasta for 3 meals for 4 people.
Linguini
tomatoes
spinach
Boil linguini in salted water until al dente. Meanwhile in pan fry mushrooms until they have a char but still some moisture in them, add tomatoes and fry add garlic salt to taste, add a small amount of pasta water when pasta is almost done. Add in desired amount of spinach. Add more garlic salt or powder over spinach. Add in cooked linguini. Stir and serve with spinach being almost wilted.
⭐️ PASTA SOUP WITH VEGGIES

Boil pasta in salted water. Drain off a little of the water. Make it with as much broth as you want. If you are trying to fill tummies, then use more broth. Add in vegetable bouillon to taste. Cook veggies as in previous recipe then add to mixture. I also added some of the Trader Joes Sriracha seasoning for some spice, but you could add a das of hot sauce, or other sriracha seasoning.
⭐️ TOSTADAS with SEASONED RICE
flour tortillas - 2 per person
1 1/2 cup dry rice - serve 3/4 cup per person if serving 4 people
sharp cheddar cheese block - serve just under 1/2 cup cheese per quesadilla (conserve)
salsa - 1-2 tablespoons per person (conserve)
To make the rice, I added Spanish paprika (smoky) and vegetable bouillon to my pot of rice. You could also use chicken bouillon or tomato chicken bouillon, etc.
⭐️ LENTIL BURRITOS
Leftover lentil chili - drained with slotted spoon
spinach - small amount or you could use romaine lettuce
salsa
flour tortillas - 2 burritos per person
I ate mine soft but if you wanted to you could make these crispy and then top with lettuce.
⭐️ LENTIL CHILI
lentil - 1 lb bag
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1/4 tsp onion powder
1/3 can salsa - or omit if you are trying to conserve and then just top with a tablespoon on top.
or add can of tomatoes if you have it.
Rice - Cook 1 1/2 cups dry rice to serve 3/4 cup rice each
serve by adding 3/4 cup rice to each bowl and top with the lentil chili mixture and a tablespoon of salsa and a small amount of the spinach. I had mine fresh but you could saute slightly with a little garlic. Don't oversaute though...you just want it slightly wilted and full bodied.
⭐️ TOSTADAS
4 flour tortillas
Leftover lentils
Chopped romaine lettuce
cheddar - small amount left over
tomatoes - diced- use a small amount
Make lentil refried beans with leftover lentils. Drain lentil with slotted spoon. Add a little taco seasoning and mash in bowl. Or omit, because they already have a nice seasoning. Fry shells, top with refried lentils, lettuce, tomato, cheese, and salsa.
