Hi everyone, I'm Cassandre. Today I'm going to show you how to make French Cookies called Langues de chat / Cat Tongues Cookies.

These light and crunchy biscuits are perfect for teatime, They can be plain or flavored with chocolate garnishes. Let's get started.

Ingredients (about 16-20 pieces):
❅ unsalted butter, softened 40g
❅ egg whites 1
❅ cake flour, sifted 40g
❅ sugar 40g
❅ a pinch of salt
❅ vanilla extract 1 tsp

Instructions:
1. Bring the butter at room temperature, but not melting.
2. Put the butter into a bowl and beat it until pale and smooth.
3. Gradually add the sugar gradually and continue to beat until creamy
4. Add egg whites gradually with a rubber spatula and beating well after each addition
5. Add the vanilla and a pinch of salt and mix well
6. Sift 1/2 of the flour and folding until combined.
7. Add the rest of egg white and flour into the bowl ,mix well gently until the flour has disappeared.
8. Spoon the mixture into a piping bag , used 1cm round nozzle
9. Pipe straight lines of the mixture, about 7cm long
10. Preheat the oven to 170C/338F/Gas without trays.
11. Bake for 9-10 minutes. Check after 7 and watch until they are done. It should be slightly golden on the outside but still pale in the centre.
12. Remove from the oven to a rack to cool. And then place the cookies in an airtight container.
