You may need to process a project inside Agisoft Metashape in "local coordinates".
No georeferencing in some reference system, no EPSG codes, no datum and no grid.
The reasons could be different.
You may not need any georeferenced data for your work.
I am thinking, for example, of photogrammetric projects in the architectural field.
You do not have a topographic tool that allows you to type the coordinates of the markers in some reference system.
Maybe you only have the total station, no GNSS antenna, and you are far from nails or known points of a framing network.
Or you have technical and specific needs for not wanting to use a geodetic datum, especially if projected, to avoid having problems with the deformations that occur when you take measurements made on the surface of the earth (curved) and you are working in very large areas or along dozens of km of roads.
There could be other reasons.

In Metashape things are pretty simple:
you import the images;
you align them;
you set the project in "local coordinates";
you identify the markers;
you assign them the local coordinates;
you optimize the alignment...
I'll show you in this video where I use georeferenced photographs (taken from the DJI Mini 4 Pro drone) and not (taken with a terrestrial mirrorless - Sony Alfa 6400) as well as targets whose coordinates I took with a total station to which I assigned position x,y,z 100,100,100.
