We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.
▼【Ingredients】 for 2 to 4 people
2 chicken thighs on the bone
1/2 red pepper
1/2 yellow pepper
2 tomatoes
1 onion
1 clove garlic
200 ml white wine
Some water
2 dried chili peppers
1 bouquet garni GABAN
Salt and pepper
1 tablespoon olive oil
Some Piment d’Espelette (Basque red pepper)
Butter rice (optional)
【Preparation】
・ Cut the chicken into pieces. Season with salt and pepper.

【Procedure】
1. In a saucepan, heat the olive oil. Sauté the chicken. Add the chopped vegetables and sauté them.
2. Deglaze with the white wine. Once the white wine is reduced, add all the remaining ingredients: dried chilies, a little water, bouquet garni, piment d’espelette, and simmer.
