👩🏻🍳 Recipes Featured in the Video
All-purpose Soy Sauce
• Ingredients:
Sempio Korean Soy Sauce (850ml), 1 onion, 1/2 pear, 100g cooking wine, 250g sugar, 12 garlic cloves, 20g ginger, 50g plum syrup, 50g white part of green onion (include the roots if possible), 30g jujubes, 20g shiitake mushrooms, 30g dried pollack strips.
• Steps:
1. Once it starts boiling, reduce to low heat and let it simmer for 1 hour.
2. Let it cool for 3 hours before portioning into smaller containers.
Chili Oil
• Ingredients:
300ml grape seed oil, 3 garlic cloves, 1 stalk of green onion, 1/4 onion, 1 knob of ginger.
• Steps:
1. Add 150ml of grape seed oil along with garlic, green onion, onion, and ginger to a cold pan and heat gently.
2. Cook until the aromatics turn a crisp golden brown, then add the remaining 150ml of oil.
3. Lower the temperature slightly before adding 3 tbsp chili powder.
4. Simmer over low heat until the chili powder turns a rich brown, ensuring all moisture is evaporated to prevent rancidity.
5. Strain and store in a bottle once cooled.
Andong Braised Chicken (Andong Jjimdak)
• Ingredients:
1kg chicken (for braising), 3 sweet potatoes, 1 onion, 1/2 carrot, 2 green onions, 2 red chilies, 2 green chilies, 3 dried chilies, 70g glass noodles (soaked for 1 hour).
• Sauce:
120ml all-purpose soy sauce, 2 tbsp minced garlic, 10g ginger, 1/2 tsp black pepper, 1 tbsp sesame oil, 2 tbsp oligo syrup, 2 tbsp cooking wine, 1 tbsp sesame oil.
• Steps:
1. Rinse chicken thoroughly, marinate with 1 tsp ginger juice and 2 tbsp rice wine.
2. Parboil chicken, discard the water, then add 700ml fresh water and the sauce. Simmer for 10 minutes.
3. Add vegetables (except green onion) and cook with the lid on for another 10 minutes.
4. Add glass noodles and green onion, cook for 5 more minutes. Finish with 1 tbsp sesame oil before serving.
Stir-fried Anchovies
• Ingredients:
150g dried anchovies, 100g sliced almonds.
• Sauce:
2 tsp all-purpose soy sauce, 1 tbsp sugar, 3 tbsp chili oil, 1 tbsp cooking wine, 6 garlic slices, a pinch of ginger powder, 2 tbsp oligo syrup, sesame seeds.
• Steps:
1. Dry-roast anchovies and almonds separately, then sift to remove fine particles.
2. Simmer the sauce, then turn off the heat and mix in the anchovies and almonds.
Braised Potatoes
• Ingredients:
3 small potatoes (or 1 large), 1 onion, 1 red chili, 1 green chili.
• Sauce:
2 tbsp all-purpose soy sauce, 1/2 tbsp soup soy sauce, 1 tbsp mirin, 1 tbsp minced garlic, 1 tbsp starch syrup, 150ml water, sesame seeds.
• Steps:
1. Toss potatoes in starch syrup and let sit for at least 1 hour.
2. Drain the liquid, and sauté the potatoes directly in chili oil.
3. Once the potatoes are cooked, add onions and chilies, sauté briefly, then sprinkle with sesame seeds.
