Wash a whole rack of pork back ribs in cold water. Cut rack of ribs into 3 slabs. In a large pot, bring water to a boil. Boil the 3 slabs of ribs for 10 moinutes. Take ribs out and rinse in cold water. Cut slabs into individual ribs. You can cut long ribs into small small pieces if you like. I prefer the long ribs for this recipe. Put ribs into an Instant Pot or other pressure cooker. Add 10 cups of water into Instant Pot. Cook under high pressure for 20 minutes and warm setting. Let ribs remain in warm setting for 10 minutes. As a final step, manual release fully before taking ribs out. The pork rib broth can be set aside in a large bowl. This broth can be used for soups, sauces and for stir fry recipes.
Note: The ribs came out fall off the bone tender. Let the ribs cool off for 2 to 3 hours if you are stir frying your ribs. Otherwise, they will fall apart during the stir frying process.
For less tender ribs, Instant Pot the ribs at 8 to 10 ribs at high pressure. Manually release the pressure by hand right away so the ribs don't get too tender.
If you using a natural pot instead of a pressure cooker, simmer the pork rib for 30 minutes at low to medium heat for restaurant level tenderness. Boil longer for more tender ribs.
HOW TO STIR FRY DRY GARLIC LONG RIBS
Preheat a wok at medium to medium high heat. Add cooking oil.
Add ginger and garlic. Sear and stir fry briefly. Add onions and stir fry briefly.
Turn heat to high setting. Add ribs and stir fry briefly.
Addl light soy sauce, dark soy sauce, salt and sesame oil. Stir fry briefly for 1 to 2 minutes. Add 1/4 cup or less of water or pork broth. This will help keep spareribs moist. Do final stir fry.
Serve dry garlic ribs on a nice plate. Enjoy!
