Gianfranco Pascucci, together with a group od chefs from the Lazio coast, has a mission: to redefine and transmit Italian seafood cuisine, making the most of every single product that the Mediterranean gives us. This is the case of blue lobster risotto, a dish that is as technical as it is capable of extracting all the different flavors of the crustacean, beyond the concept of zero-waste cooking.
