Today, I will show you how to make braised chicken and daikon. The chicken drumettes and daikon absorb all the flavors, becoming tender and packed with umami. 【Ingredients】 (Serves 4)
<Braised Dish>
- 8 chicken drumettes
- 350g daikon
- 4 eggs
- 15g ginger
- 1 tbsp uncooked rice
- 3 tbsp soy sauce
- 1 tbsp mirin
- 3 tbsp sake
- 2 tbsp sugar
- 1 tbsp vinegar
- 1 tsp dashi powder
- 400ml water
- Cooking oil as needed
【Instructions】
1. Boil the eggs in boiling water for 8 minutes, then cool them in ice water.
2. Peel the daikon, cut it into 2 cm thick pieces, then halve them and trim the edges.
3. Place the daikon in a pot, add water and uncooked rice, bring to a boil, then simmer on low heat for 5 minutes to pre-boil.
4. Slice the ginger.
5. Make small cuts on both sides of the chicken drumettes along the bone.
6. Heat oil in a pot, place the chicken drumettes skin-side down, and sear them until golden brown on all sides.
7. Add the daikon, water, ginger, sake, mirin, and sugar to the pot. Bring to a boil, then simmer for 5 minutes.
8. Add soy sauce, dashi powder, and vinegar. Once boiling, place a drop lid and simmer on low heat for 30 minutes.
9. Remove the drop lid, simmer on medium heat for 5 more minutes, then turn off the heat. Add the boiled eggs, let them cool, and it's ready to serve.
