Brown Stew Chicken Recipe! In today's video, we're cooking up a classic Caribbean favorite: Brown Stew Chicken. This mouth-watering dish is known for its rich, savory flavors and tender chicken that's been marinated to perfection. Whether you’re a seasoned cook or a kitchen newbie, this recipe is simple to follow and will impress everyone at your dinner table!

Caribbean Brown Stew Chicken
oil
6-7 piece chicken thighs
2 tbsp garlic powder
1 tbsp onion powder
1 tbsp all-purpose Seasoning CWT
1 tbsp chicken bouillon
2 tbsp paprika
2 tsp allspice
2 tbsp Green seasoning or Sofrito or Epis
Combine all of the above-listed ingredients

4 cloves garlic chopped
2 tbsp ginger chopped
2 green onions
1/8-1/4 cup parsley chopped
2 medium bell peppers red/green diced
4-5 tbsp browning sauce
3 sprigs thyme
2-3 tbsp brown sugar
Combine the ingredients with the chicken
Cover with plastic wrap and marinate for 2 hours - overnight.
Remove from the refrigerator, and remove the excess veggies from the chicken before adding it to the oil. Brown the chicken for about 2-3 minutes on each side, remove and set aside.

Add the veggies to the pot and stir. Cook until slightly tender. Add water, and re-add the chicken back to the pot along with a Scotch bonnet pepper, and cover with a lid. Cook the chicken for about 20 minutes.

4-5 potatoes yellow or white cubed
Carrots chopped
1 Scotch bonnet
2 tbsp ketchup

Add the potatoes, carrots, and ketchup, cover with a lid once again, and allow the chicken to cook Allow the potatoes to become softened for an additional 20 minutes. For a total of about 40 minutes. Remove the thyme stems before serving.
Add additional seasonings if necessary to taste, ex: more brown sugar, salt, ground black pepper, bouillon, etc.
