Ingredients for kvass:
370 ml of milk
20 g of fresh yeast
3 spoons of sugar
Ingredients for the dough:
700 g of flour
3 spoons of sugar
120 g of room temperature butter
3 spoons of yogurt
2 egg yolks
lemon peel
vanilla
a pinch of salt

Preparation
Prepare 700 g of smooth wheat flour in a bowl and make a small indentation in it.
Add 370 ml of warm milk, 3 tablespoons of sugar and crumble 20 g of fresh yeast.
Stir with a spoon so that you catch 2 spoons of flour from the whole mass and leave the yeast to rise for about 20 minutes.
Not every recipe for buns requires the preparation of kvass, but still, sweet puff pastry is a tad tastier if it is made with kvass.
After 20 minutes, add the other ingredients and mix gently.
At this point it is not necessary to knead the dough, it is only necessary that the flour and wet ingredients are mixed so that the process of creating gluten begins.
Cover the dough and let it rest for 20 to 30 minutes.
After the dough has rested, knead it, i.e. knead for about 4 minutes until the gluten develops nicely and the dough becomes smooth.
Return the dough to a clean bowl, break it and leave it to rise for 30 minutes to 1 hour, depending on the heat in the kitchen.
When the dough has risen, sprinkle the work surface with flour and transfer the dough over the flour.
Roll out the dough with your hands or a rolling pin and divide it into 24 equal parts.
Put a teaspoon of marmalade in each square of dough and stick the dough and shape it into a ball.
Grease a pan with a diameter of 32 cm with butter and arrange the buns in the pan.
Cover the buns and let them rise at room temperature for about 45 minutes.
Before baking, coat them with oil and bake at 180 °C for about 35 minutes, depending on the power of the oven.
Coat the baked buns with oil and cover with a napkin and leave to cool a little.
Before serving, sprinkle them with powdered sugar.
