This carrot cake can be baked quickly and easily in an air fryer or in the oven. No added white sugar, no flour and no sweetener. And the best thing about it - it's incredibly delicious and healthy!
Recipe for 2 servings.
**Ingredients:**
- Carrots - 100 g
- Dates - 5 pcs. (30 g)
- Hot water - 60 g
- 1 egg
- Ground almonds (almond powder) - 120 g
- Butter (or coconut oil) - 40 g
- Baking powder - 1 tsp
- Prunes - 35 g
- Walnuts - 35 g
- Raisins - 30 g
- Cinnamon - 1/2 tsp
- Desiccated coconut - for sprinkling
**Instructions:**
1. Wash, peel and finely grate the carrots.
2. Soak dates in hot water for 30 minutes, then remove the stones and mash them with water.
3. In a bowl, mix almond powder, butter, baking powder, prunes, walnuts, raisins and cinnamon.
4. Add crushed dates and mix well until a dough forms.
5. Pour the batter into a baking pan and place it in the air fryer.
6. Select **baking mode**, bake at **180°C**, for **25 minutes**.
7. Lightly chop the coconut flakes to keep them airy.
8. Sprinkle the cake with coconut flakes before serving.
