This Cassava Pone is a favorite in the Caribbean… absolutely delicious!
Ingredients
3 Cups Grated Cassava
1 Cup Grated Pumpkin
1 1/2 Cups Shredded or Grated Coconut
1/2 Cup Coconut Milk
1/2 Cup Evaporated Milk
1 Cup Sugar
1 tsp salt
1 -2 cinnamon powder
1-2 tsp nutmeg
1 tbsp vanilla essence
3 tbsp melted butter
2-3 tsp grated ginger
1/2 tsp black pepper
1/4 cup condensed milk (optional) add more if desired
1/4 cup raisins
Bake at 350 for 1 -1 1/2 hours
Allow to cool and set for atleast 1 hour before cutting
