經典的冰皮月餅配上自製的香草風味的奶黃餡料,不再是預拌粉做的冰皮月餅~


建議使用月餅模具克數為75g,所以你的皮+餡包起來的總重量不要超過75克,以下配方大約可以做16顆

餅皮Wrapper
Each ball potion:31~33g/pc (約佔月餅45%)
• 糯米粉81g glutinous rice flour
• 粘米粉或在來米粉 63g rice flour (water milled version)
• 澄粉 36g wheat starch
• 白糖80~90g sugar (甜度可以調整)
• 椰漿(也可用鮮奶代替)333g coconut milk or milk
• 沙拉油 33g vegetable oil
• 熟糕粉 適量 (熟糯米粉 )cook glutinous rice flour
壓模造型時候撒上模具內以及月餅表面用
• 抹茶粉 ½~1 TBSP matcha powder (optional)

奶黃餡Creamy custard filling
Eat ball portion:40~42g/ 1pc (約佔月餅55%)
• 卡士達粉48g custard powder(吉士粉)

• 椰漿或鮮奶80g coconut cream or milk
• 鮮奶油 150g cream
• 融化奶油65g melted unsalted butter
• 綿白糖150 granulated sugar
• 蛋黃160g egg yolk
• 天然香草醬 1/2~1 tsp vanilla paste ,optional (如果你想要強調香草的風味,可以再加入少許增加風味)
