Recipe for Coconut Sponge Dosa
Ingredients:
2 cups raw rice
1 cup cooked rice
1 cup grated coconut
1 cup coconut water (or coconut juice)
3 large ice cubes
½ cup water
1 tsp salt
Instructions:
1. Preparing the rice:
Wash the 2 cups of raw rice thoroughly a couple of times and soak them in water for at least 5 hours (or longer). This step ensures the dosa batter becomes light and gives the desired "sponge" texture.
2. Blending the ingredients:
After soaking, drain the water from the rice. In a mixi, add the soaked rice, 1 cup of cooked rice, 1 cup of grated coconut, 1 cup of coconut water, and 3 large ice cubes. Mix everything until the batter is smooth but with a slightly thick, fine-grain consistency, similar to fine semolina (rava).
3. Mixing and fermenting:
Pour the blended batter into a large bowl or pot. Add ½ cup water to the blender to rinse out the remaining batter and pour it into the bowl as well. Mix the batter thoroughly with clean hands to ensure even consistency.
Cover the bowl and let the batter ferment for 12 hours or overnight in a warm place.
4. After fermentation:
Once the batter has fermented, add 1 tsp of salt and gently stir it in. Be careful not to overmix, as you want to retain the air bubbles for a light and fluffy texture. The batter should be thick and airy.
5. Cooking the sponge dosa:
Heat a non-stick pan over medium heat.
Pour a ladleful of batter onto the center of the pan (do not spread it thin, as you would for crispy dosa). The dosa should naturally settle into a slightly thick shape for a soft and spongy result.
Cover the pan with a lid and let the dosa cook on medium heat until the top is fully cooked and looks fluffy. There's no need to flip the dosa.
6. Serving:
Serve the soft and fluffy coconut sponge dosas warm with chutney, sambar, or any side dish of your choice
