RECIPE:

CAKE RECIPE

1/2 CUP SHORTENING,1/2 CUP BUTTER
2 CUPS SUGAR
4 EGGS
2 2/3 CUPS SIFTED CAKE FLOUR (I USE WHITE LILY ALL PURPOSE)
2 TSP. BAKING POWDER
1/2 TSP. SALT
1 CUP MILK
1 TSP. VANILLA


CREAM SHORTENING, ADD SUGAR GRADUALLY. CREAM UNTIL MIXTURE IS VERY FLUFFY. ADD EGGS ONE AT A TIME, BEATING WELL AFTER EACH ADDITION. SIFT FLOUR, BAKING POWDER AND SALT TOGETHER, ADD TO MIXTURE ALTERNATELY WITH MILK. ADD FLAVORINGS. SPREAD APPROXIMATELY 2/3 CUP TO 3/4 CUP DOUGH IN EACH 3 1/2" PAN AND BAKE 5 OR 6 MIN. AT 350 DEGREES. WHEN COOL, TOP LAYERS WITH LEMON MOUSSE. THEN FROST OUTSIDE PERIMETER WITH FLUFFY FROSTING AS DONE ON THE VIDEO. SPRINKLE FLUFFY FROSTING WITH FLAKED COCONUT.



LEMON MOUSSE
Lemon juice from 2 lemons (~1/2 cup)
sugar (120 g/ 2/3 cups),
Water (100ml / 2/5 cups).
Turmeric (1/3 tsp) for color.
Cornstarch (30 g / 3 level tbsp)

Cook over low heat until thickened.
Allow to cool in the refrigerator.

FLUFFY WHITE ICING

1/2 CUPS KARO SYRUP
1/4 CUP WATER
VANILLA FLAVORING
4 EGG WHITES

BOIL TO SOFT BALL STAGE AND POUR OVER STIFFLY
BEATEN EGG WHITES SLOWLY AND BEATING CONSTANTLY.
