Materials
For the dough;

4 glasses of flour
2 cups of warm water (400 ml)
1 tablespoon instant yeast
1 teaspoon salt
1 tablespoon of granulated sugar

For the sauce;
1 teaspoon of yoghurt
1 egg yolk

For the above;
Sesame

Preparation of
First of all, let's take 4 cups of flour, 1 tablespoon of instant yeast, 1 teaspoon of salt and 1 tablespoon of granulated sugar into our kneading bowl.
Let's mix all the ingredients well, then create a hole.
Let's add 2 glasses of warm water to the hole we created. Then let's start kneading the dough slowly. We need to obtain a dough that has a soft consistency and slightly sticks to the hand.
After covering the dough we prepared with stretch film, let's cover it with a clean kitchen cloth.
Let's leave it to ferment for 40 minutes in a warm environment. Let's uncover the yeast dough.
Then let's transfer it to the counter we sprinkled with flour. Knead it again and make it nice
Let's wrap it up. Then let's divide our dough into 4 equal parts.
Let's gather the divided pieces well and turn them into meringue.
Let's cover the bottom of our baking tray with breadcrumbs.
Let's place the meringues we prepared on the tray. Thanks to the breadcrumbs, the bottom of the pitas will be much better browned and crispy.
Let the dough cover itself for about 15 minutes and let it rise again.
Meanwhile, let's whisk 1 teaspoon of yoghurt and 1 egg yolk to spread on our pitas.
Let's apply this sauce we prepared on the risen dough again with the help of a brush.
Let's expand the dough by pressing it gently with our hands. In order to prevent the shape of the pita from changing while cooking, it is useful to go over the places we pressed a few times.
Let's spread the remaining sauce liberally on the pitas.
Finally, sprinkle sesame seeds on them, optionally.
Let's bake our pitas in the oven preheated to 230 degrees for 15 minutes.
