Today, I made a crispy outside and chewy inside glutinous rice pie!
Usually, glutinous rice pie is baked with nuts, beans, etc., but I made it a little special. I usually like honey white rice cakes and eat them often, but I wondered if I could make chapssal pie with honey in the middle like honey white rice cakes. So I made it with brown sugar in the chapssal pie dough, and it was really delicious! I added injeolmi crumbles to it for a rich flavor, and this combination went really well together, so I quickly filmed it and edited it. 😊
This is really delicious when you eat it right after baking it, or when it's hot after it cools down. 👍
The outside is crispy! And the brown sugar inside melts and becomes moist like honey, so it's so moist and chewy. 😊
I added finely chopped walnuts to the dough to balance the sweetness and add a rich flavor.
In the video, I made it with dry glutinous rice flour, but I'll write down the recipe for making it with wet glutinous rice flour. It's definitely moister and chewier when you make it with wet glutinous rice flour. However, it is also delicious when made with dry glutinous rice flour, so I think you can make it with the ingredients you like!

▶ Ingredients ◀ Use a high muffin pan, 12 servings
🔥 Preheat at 392℉(200℃) for 15 minutes. And bake at 365℉(185℃) for 24-25 minutes.
✏ Rice cake pie batter (when using dry rice flour)
Dry rice flour 360g
Milk 370g
Sugar 60g
Salt 5g
Melted unsalted butter 30g
Chopped walnuts 40g
✏ Injeolmi crumble
Unsalted butter 55g
Sugar 30g
3 pinches salt
cake flour 60g
Soybean powder 15g
✏ Soybean powder sugar
Brown sugar 60g
Soybean powder 7g
✏ Rice cake pie batter (When using wet rice flour)
Wet rice flour 510g
Milk 220g (Add 200g first and add little by little while watching the dough condition.)

Salt (wet If the glutinous rice flour contains salt, omit it)

◼ Storage method ◼
- Store at room temperature and eat within 2 days. It is the most delicious on the day it is made, and if you want to eat it the next day, heat it slightly in the microwave or air fryer and eat it.
