笑口棗/開口笑

材料 (大約40個)
低筋麵粉 150克
泡打粉 2克
雞蛋 1隻
白糖 35克
食用油 20克
水 5-10 克 (視乎麵粉的吸水力而定)
白芝麻 適量

做法:
• 把低筋麵粉、泡打粉和白糖攪拌均勻。泡打粉的作用是使笑口棗膨脹和裂開。
• 加入一隻蛋液, 攪拌均勻。
• 加入食用油20克, 攪拌均勻。
• 視乎麵粉的吸水程度, 把水逐少加入。用手搓至麵粉成團。
• 用保鮮紙把麵團蓋好, 讓它休息15分鐘。
• 然後將麵團分成一半, 搓成長條形, 然後切成小粒( 每粒大約6克)。 不建議切太大粒, 因為中間難已熟透。
• 搓成球體, 沾水及芝麻, 然後搓圓。
• 中小火熱油 , 竹快輕微冒泡, 用140°C油溫,用最細火炸至淺褐色 。最後2分鐘轉用大火逼出笑口棗的油分, 炸至褐色 。
• 後涼後便可享用。 儲存於密實盒內, 可以保存兩星期。

Sesame ball recipe
Ingredients (about 40 pieces)
Cake flour 150g
Baking powder 2g
Egg 1pc
Sugar 35g
Cooking oil 20g
Water 5-10g (depending on the water absorption capacity of the flour)
Some white sesame seeds

Directions:
• Mix the cake flour, baking powder and sugar evenly. The function of baking powder is to make the dates swell and crack.
• Add one egg liquid and mix well.
• Add 20g of cooking oil and stir evenly. Depending on the degree of water absorption of the flour, add less water gradually.
• Knead the flour with your hands until it forms a dough.
• Cover the dough with plastic wrap and let it rest for 15 minutes.
• Then divide the dough into a half, roll it into a long strip, and cut it into small pieces (about 6g each). It is not recommended to cut into too large pieces as it will be difficult to get them fully cooked inside.
• Shape into a ball, dip in water and sesame seeds, then roll into a ball.
• Heat oil over medium-low heat until bamboo bubbles slightly. Use 140°C oil temperature and slowly fry until light brown.
• For the last 2 mins, turn to high heat and fry the sesame ball until brown.
• Let cool and enjoy. Stored in a tight box, it will keep for two weeks.
