Delicious Chicken Drumsticks & Potato Roast Dinner

Ingredients
• 1 kg chicken drumsticks
• 1 kg baby potatoes, cut in halves (skin on)
• 3 tbsp olive oil
• Juice of ½ a lemon
• 1 tsp coriander powder
• 1 tsp ginger powder
• 1 tsp onion powder
• 1 tsp paprika powder
• 2 garlic cloves, finely chopped
• 1 tsp black pepper
• 1 tsp salt
• Handful of chopped parsley, for garnish
Instructions
1. Preheat the Oven: Set your oven to 200°C (400°F) and allow it to preheat.
2. Make the Marinade: In a bowl, combine coriander powder, ginger powder, onion powder, paprika powder, black pepper, salt, chopped garlic, olive oil, and lemon juice. Mix thoroughly to create a flavorful marinade.
3. Prepare the Ingredients:
• Clean and pat dry the chicken drumsticks.
• Wash the baby potatoes thoroughly and cut them in half, keeping the skins on for extra flavor and texture.
4. Assemble the Dish:
• Spread the halved potatoes evenly in a baking tray.
• Arrange the chicken drumsticks on top of the potatoes.
• Pour the prepared marinade over the chicken and potatoes, ensuring everything is well coated. Use your hands or a spatula to mix.
5. Bake to Perfection: Place the tray in the preheated oven and roast for 40 minutes to 1 hour, flipping the chicken halfway through to ensure even cooking. The potatoes should be golden and tender, while the chicken should have a crispy, caramelized skin.
