Easy Cookies with Jam and Chocolate

Today we make our favorite petit fours. Filled with chocolate or jam and dipped in chocolate, they go perfectly with our morning or afternoon coffee! It is customary to celebrate them especially at Christmas but we enjoy them all year round! Try this easy recipe and I promise you will keep doing it!

🥣 RECIPE:

Ingredients

450 gr. cow butter or half and half with margarine
200 gr. powdered sugar
4 eggs
200 gr. corn flour
1 tbsp. baking powder
500 gr. flour
3 vanillas
A little salt
Melted chocolate
Jam or praline for the filling
Chocolate or colored truffle

Method

Put the butter (which is at room temperature) with the powdered sugar in a bowl and mix until they are homogenous. In the process we incorporate the eggs one by one.

Continue adding the corn flour, the baking powder, the flour, the vanilla, the salt and mix well until they become dough. Expect to have a very soft dough.

Then, we put the dough in a bag filling with a double bag and a star tip. If we do not have a bag filling we can use a strong food bag and cut the edge with scissors! Our biscuits will not have a fancy design but the taste will be the same.

Next step is to make our cookies in a pan with non-stick paper and bake at 180 degrees Celsius for about 12 minutes, (depending on the oven of course).

TIP 1: Do not make them too thick because they swell a little and afterwards we will combine them with jam so they will gain even more volume.

Then melt the chocolate in a baking pan.

Once our cookies are baked and after we have left them to cool for a while, we combine them with apricot jam or whatever we like (eg chocolate) and dip half the surface in the melted chocolate (from the previous step) and immediately in truffle . We can leave them alone with chocolate if we want to.

TIP 2: Let them dry on the non-stick paperand then keep them in a taper or covered with a film! As the time passes by, they get the necessary moisture from the jam and become even more delicious!

TIP 3: If we do not have baking powder we use flour that swells on its own.
