Easy Red Bean Paste Pancake Recipe (豆沙鍋餅) with Papa Fung

A very easy-to-make pancake that’s slightly crispy on the outside with a sweet red bean paste filling. This simple snack can be made in just a few minutes to satisfy any late-night cravings.

RED BEAN PASTE PANCAKE RECIPE [豆沙鍋餅]
This recipe makes 15 pieces. [製成十五塊]

INGREDIENTS [食材]
500g Red Bean Paste (To make your own red bean paste, please see crystal cookie recipe) [紅豆蓉(自炒紅豆沙可以參考水晶餠)]
150g Pastry Flour [低筋麵粉]
2 Eggs [蛋]
280ml Water [水]

Directions [製作]
1. Scramble eggs, add in water, mix. Place pastry flour, mix until combined, strain, set aside. [蛋打散加水搅匀,倒入麵粉撤底攪匀至冇粉粒過篩備用。]
2. Heat up frying pan, using an oil-soaked paper towel, wipe some oil onto pan, pour a scoop of the mixture in to create a thin layer. Pan fry at low heat until the mixture doesn’t stick to pan, remove pancake and set aside to cool. Repeat until all the mixture is used up. [預熱煎鍋,用紙巾索油搽煎鍋,倒入適量粉漿,燙勻煎鍋,薄薄一浸,重覆煎完粉漿為止。]
3. Scoop 1tbsp of red bean paste and spread it across the pancake. [待涼後放一湯匙紅豆蓉在中間抹平。]
4. Fold the pancake into a rectangle, set aside. [摺成長方形備用。]
5. Heat up a pan, drizzle some oil, enough to cover half of the pancake’s height. [熱鑊多落些油浸至餅一半的高度。]
6. Pan fry until both sides are crispy and golden brown, place it onto paper towel to absorb some oil. Slice and serve. [以半煎炸的方式煎至两面金黄色,取出放在紙上索油,即可切塊食用。]
